Saute Clam with Yellow Lantern Chilli Sauce

【Ingredients】
500g Clams
30g Garlic, chopped into paste
15g Red pepper
10g Ginger, chopped into paste
【Sauce】
1 cup Peanut oil
2 tsp Salt
1 tsp PRB Yellow Lantern Chilli Sauce
20mL PRB Kwang Tung Mi Jiu (rice wine)
15mL PRB Rice Vinegar
【Method】
1. Rinse clam and drain.
2. Heat up the wok with peanut oil, then saute ginger, garlic, and red pepper.
3. Add clams for stir-frying, add salt and saute over high heat.
4. Add yellow lantern chilli sauce, Mi jiu (rice wine) and rice vinegar, stir fry until sauce is thickened.
